~20 min, broiler, rice bowl. Serves 4 (with leftovers).

Prep order (do this first β last):
- Start rice β needs 20-25 min unattended
- Make quick pickles while rice cooks
- Mix miso-mayo while pickles rest
- Slice avocado and cube salmon last (avocado browns fast)
Prepped ingredients (have these ready):

Miso-mayo mix (the adaptation):
- 2 tbsp white miso + 3 tbsp mayo β whisk smooth
- Original used chili crisp + mayo; this swap is milder, umami-forward
- Taste before spreading β add a dash of rice vinegar if you want more tang
Streamlining tips:
- Pickled cucumbers can sit for hours β make first and set aside
- Rice cooks 20 min = all other prep fits in one window
- Start salmon under broiler when rice timer goes off β they finish together
- Oscar-friendly: plain rice + a plain piece of salmon (skip miso-mayo) + avocado slices + cucumber
- No need to peel Persian cucumbers β thin skin

Ingredients (adapted)
- 3 Persian cucumbers, thinly sliced
- ΒΌ cup unseasoned rice vinegar, plus more for drizzling
- Kosher salt
- 2 cups sushi rice or other short-grain rice
- 2 tbsp white miso paste
- β cup + 3 tbsp mayonnaise
- 12 oz salmon fillet, preferably skin-on, cut into 1β cubes
- Pinch of cayenne pepper
- 2 avocados, thinly sliced
- 3 scallions, thinly sliced
- Furikake, shichimi togarashi, and/or toasted sesame seeds (for serving)
Method
- Pickles: Toss cucumbers, ΒΌ cup rice vinegar, and a big pinch of kosher salt in a medium bowl. Let sit, tossing occasionally, until ready to use.
- Rice: Bring rice, a pinch of salt, and 2Β½ cups water to a boil. Reduce heat to low, cover tightly. Cook 20-25 min until tender and water is absorbed. Gently fluff with a fork.
- Miso-mayo: Stir together 2 tbsp white miso and β cup mayo in a small bowl. Set aside.
- Salmon: Heat broiler on high with rack in upper third. Pat salmon cubes dry, season with salt. Mix remaining 3 tbsp mayo with a pinch of cayenne; toss salmon to coat. Arrange skin-side up on a foil-lined baking sheet. Broil until browned and opaque throughout, 8-10 minutes.
- Serve: Scoop rice into bowls. Divide salmon, drained pickled cucumbers, and avocado among bowls. Spoon some cucumber pickling liquid over. Drizzle with miso-mayo. Top with scallions and furikake/sesame seeds.
